Keto Delivered Review

My awesome friends at Keto Delivered shipped out their first keto friendly box subscription this month and I was presently surprised with all of the items that were included in the box. All of the items were locally made and owned businesses that offers keto friendly foods! The box included so many different items. My favorite items included the everything bagel seasoning and the spicy Thai peanut butter. I would totally recommend subscribing to their box. The assortment I received are things that I could not have found at my local stores!

Low Carb Green Chili Pork Recipe

Hi All,

I've received some requests for my recipe for my green chili pork recipe. Below you will find all the ingredients and directions on how to make it! :)

1 large pork butt
1 large onion chopped
1-2 tbsp chopped garlic
1- 2 cans of chicken broth, or chicken bullion and 2 cups of water.
Fresh Roasted green chilis (you can used canned, if you use canned I would use 2-3 small cans of them. Since I live in Arizona our local Mexican grocery store sells these freshly roasted and I used about 6 large green chili peppers and chopped them up and threw them in)
1 large can of green chili enchilada sauce
Salt
Pepper
I also added a spice called Adobo- This isn't a requirement but its a Mexican spice that you can find in the ethnic isle most likely, but its a yellow spice thats in a ton of authentic Mexican dishes. I honestly don't know how to describe the flavor (here is a link to the spice: click here)

1 large crock pot
1 crockpot liner for easy clean up (not required but highly suggested lol)


Set crock pot on low for 6-8 hours, and add all the above. Place the pork butt with the fat piece on the top. Once the pork shreds easy its done basically. Before shredding I would recommend taking the fat piece off and throwing it out, unless you want chunks of fat in your pork :)

Low Carb Coleslaw

Low Carb Coleslaw Recipe:

1 package shredded cabbage, or shredded coleslaw mix. 
½ cup or so of Mayo
1/3 cup of white Vinegar
¼ cup of Splenda (use less if you like it less sweet and more zesty tasting, but I prefer it sweet)
Salt to taste 
Pepper to taste 

Mix the mayo, white vinegar, Splenda. Salt and pepper together until smooth and creamy. Add cabbage and stir. Let coleslaw cool and “marinate” for at least 1 hour prior to serving. If the coleslaw looks “dry” don’t worry, the longer it sits, the better it tastes, and it “makes” more dressing while in the fridge. You can add onions, and carrots if you’d like I don’t because of the carb count but if you buy a pre-made mix just go off of those values. Once you’re ready to serve stir it up again to “rewet it” and your good to go.

Low Carb Chicken Salad

Chicken Salad Recipe:

Firstly I will say I am not a cook that cooks with precise measurements, I like things zesty, and usually eyeball everything so most likely it will reflect in my recipes. J

Low Carb Chicken Salad
2 cooked chicken breasts from a Costco Rotisserie Chicken
2-3 heaping tbsp Mayo
2  heaping tbsp Sour Cream
1 medium onion
3 green onions
Salt to taste
Pepper to taste 
1tbsp Lemon Pepper
1/2 tbsp Garlic Powder
Celery if you like it (I don’t like celery so I omit this)

      Chop chicken into little pieces. Chop onions and green onions, add chicken, onions, mayo, sour cream, and seasonings into a bowl, and stir.  For the best results refrigerate it for at least 3 hours before eating to let it "marinate" 


Carb amount depends on the brand of mayo, sour cream.  Keep in mind ¼ cup of onions is around 4 carbs, so use less if you want a lesser carb amount/ I would say this recipe would make 3-4 servings of chicken salad. Use the whole chicken if you want more and adjust accordingly. I also make my tuna with the same recipe as above, call me boring but its tasty. J

My Favorite Low Carb Snacks

I get a lot of questions about what I snack on, and My Low Carb on-the-go snack options:
  • ·      Pepperoni
  • ·      Cheese sticks
  • ·      Deviled Eggs
  • ·      Almonds
  • ·      Costco Macadamia Nuts
  • ·      Atkins Bars ( I limit these to 3-4 bars a week)
  • ·      Olives (Garlic Stuffed and Kalamata are my favorite, from Trader Joes)
  • ·      Ham and Cream Cheese Roll Ups (take room temp cream cheese, mix salt, pepper, garlic powder together, then spread the cream cheese mix onto slices of cheap ham meat, and roll them up. Let them cool in the fridge and then cut them up using scissors in small pieces and throw it in a plastic bag to grab it on the go.  (I usually use the $1 lunchmeat in the plastic bags, I can’t think of the brand currently.)
  • ·      Pickles, kosher or the sugar free sweet pickle slices by Vallasic
  • ·      Bacon
  • ·      Marinated mozzarella balls from the deli section
  • ·      Pepperoni chips with the same cheese mix above but I dip them into the mix like “chips” and dip. (Microwave pepperoni on a paper towel for 45 seconds or until crispy. Let them dry and become crispy. You can also flip them over and microwave again if you find they aren’t crispy, or still too “greasy”)
  • ·      Pork rinds and guacamole

Chicken and Mushroom Alfredo Recipe

I love this meal. Love love it. Its really simple and really quick with little ingredients on hand.

Low Carb, Keto Friendly Chicken and Mushroom Alfredo
1 rotisserie chicken diced. (this saves time, and effort)
7-8 large button mushroom. sliced into thin pieces
1/2 large onion diced
3/4 cup heavy cream (I wanted extra sauce for my family, use less if you want less sauce/fat/carbs
4 cloves of garlic
3 tbs butter
parmesan cheese depending on liking (I like mine a little thicker so add more cheese, if your doing a side of pasta for your family if they don't eat low carb omit the extra cheese until after you serve yourself if you want extra sauce for their pasta.)
Olive Oil to cook mushrooms/onions in-- maybe 2 tbsp depending on your liking
Salt
Pepper
Basil

1. Cook sliced mushroom and onions until tender/brown on medium heat.
2. Once browned place butter into pan and stir.
3. Add salt, pepper and basil. stir again.
4. Add chicken and garlic, cook until chicken is warm and garlic is brown/done.
4. Add heavy cream and stir until cream bubbles
5. Add cheese and stir again until sauce becomes thick. If sauce is still thin, add additional cheese.
